
Our Approach to Production
As of August 2022, all production activities in our vineyard are carried out in accordance with organic farming principles.
Due to the climatic conditions in our region, our harvest season takes place in July and August and lasts for approximately one month. This period coincides with the peak of our summer tasting events, making it the liveliest time in our vineyard. Apart from this, our production and agricultural activities continue throughout the year.
Grape Harvest
Due to the climatic conditions in our region, our harvest season takes place in July and lasts for approximately one month. The harvest plan is organized based on the ripeness of the grape varieties, and the grapes are picked at the first light of dawn.


Initial Processes
The harvested grapes are immediately transferred to the fermentation area in crates without any delay. After destemming and crushing, they are placed into cooled tanks to begin fermentation. Processing the grapes right away helps preserve their aromatic value.
Primary Fermentation
The grapes are fermented in temperature-controlled tanks and regularly aerated to facilitate the first fermentation, during which sugar is converted into alcohol. This process takes approximately two weeks.


Secondary Fermentation
At the end of the first fermentation, the wines are transferred to airtight stainless steel tanks, where the secondary fermentation begins. During this process, the malic acid in the wine is converted into lactic acid, allowing the flavors to settle and resulting in a smoother taste. After approximately 6-7 months, the wine is filtered and prepared for bottling.
Oak Barrels
Our Con Amore and Adagio varieties are then transferred to oak barrels, where they are aged for one year.
